Mustard oil, a substance obtained from mustard, as a transparent, volatile and intensely pungent oil. The name is also extended to a number of analogous compounds produced either naturally or artificially.
Term applied to any of the organic isothiocyanates in general, but more specifically to allyl isothiocyanate; such oils are metabolically convertible to thiocyanates and may thus lead to goiter.
