Medical Definition of Iditol dehydrogenase

1. An alcohol oxidoreductase which catalyses the oxidation of l- or d-iditol to l- or d-sorbose in the presence of NAD. Acts also on glucitol to form fructose and on other closely related sugar alcohols. Chemical name: L-Iditol:NAD+ 2-oxidoreductase Registry number: EC 1.1.1.14 (12 Dec 1998)
