Converts vanillate (3-methoxy-4-hydroxybenzoate) to protocatechuate (3,4-dihydroxybenzoate); enzyme may be related structurally to ferredoxins; demethylates lignin-derived methoxyphenolics such as syringic or hydroxyvanillic acids to the corresponding phenolic products
