An enzyme catalyzing the reversible interconversion of alpha-and beta-aldoses (e.g., alpha-and beta-d-glucose); also acts on l-arabinose, d-xylose, d-galactose, maltose, and lactose.
Synonym: aldose mutarotase, mutarotase.
