Isolated from celeriae root tips; catalyses the nad-dependent oxidation of mannitol to mannose not to fructose; strongly inhibited by NADH and sensitive to alterations of nad-NADH ratio. Do not confuse with mannitol dehydrogenase (EC 1.1.1.67) which is a 2-oxidoreductase which converts mannitol to fructose
