Medical Definition of Hydrophobic bonding
1.
Interaction driven by the exclusion of nonpolar residues from water. It is an important determinant of protein conformation and of lipid structures and is considered to be a consequence of maximising polar interactions rather than a positive interaction between apolar residues.
